Before I tell you my disappointing news, I want to give you this great recipe that I made for dinner.  I modified it a very little bit from the Racing Weight Cookbook.

Cuisine: Kale, Shredded Sweet Potatoes & Poached Eggs in 1 skillet

Very tasty & easy meal in 1 skillet!
Ingredients
  • 2 sweet potatoes shredded
  • 5 C kale washed & chopped
  • 1 T olive oil
  • pinch of salt & pepper
  • 1 T smoked paprika
  • 6 eggs
Instructions
  1. Heat olive oil in large skillet
  2. Shred sweet potatoes in food processor or by hand
  3. Cook sweet potatoes in skillet for 6 minutes on medium while you chop kale into small pieces
  4. Add kale to skillet & sautee with lid for an additional 5 minutes until kale is wilted
  5. Make 6 "wells" for eggs
  6. Crack an egg into each egg & cover for about 5 minutes (cook until eggs are done to your liking).
  7. Serve in skillet!

Now for my disappointing news that I feel I need to share with you!  Ugg!!!!!!!!!!!!  I told you that I’ve been having some issues with shin splints lately, right?!

Well, I’m having lots of issues with shin splints! I went out for a 10-11 mile run last weekend.  The weather was a little chilly & windy, but FINE!  I was all psyched, had a new audiobook uploaded, wore my NEW Pro Compression “fun” socks IMG 6300 225x300 Meatless Monday .  I had a good night sleep (despite waking up a couple of times with aches in my shins), I was ready to RUN!  I ran about 1 mile & my shins were really hurting, I was doing lots of self talk to talk myself through the pain & I felt as thought I was hobbling, the pain got worse  & worse.  I thought this is really stupid & I must take my own advice that I always give to others “listen to your body & respect what your body is telling you”!  So, I walked a little.  Then, I ran a little & my darn shins hurt.  So, I walked.  Ran, Walked.  This went on for 6.5 miles.  I was enjoying my new audiobook, but holy ned was I frustrated.  Besides the fact I was so darn frustrated, I was also cold because I was dressed to run, NOT WALK!  Well, I’ve been doing some shin exercises & I know that in order to heal, I CAN NOT run until they’re gone!  @#&%!^#$@@*&^!!!!!

 Meatless Monday

I’m not sure if I’m more frustrated or sad.  The weather is finally nice enough for me to be running on the pavement & not the treadmill & I CAN’T!  I always get shin splints when I transition from the winter treadmill to the spring pavement, but it’s never been this bad that I woke up in pain from a deep sleep before!    Well, thanks to Erica  (Erica Finds), I’m doing some exercises using the HOT5 app she posted about on her blog (it’s free! BONUS!).  It’s something new to me & I’ve also started using my 100 Push Up app again.  I’ve been very 1 dimensional for months now, so maybe this is a sign that I really need to do some all over body toning to strengthen myself up to get in better shape for this running season.  Yeah, that’s right, that’s what I’m telling myself.
